Occitan Spicy Sauce

A "TABANARDE" STORY

A Sensational Creation

We use different varieties of red chili peppers grown in Occitanie.

The Tabanard chilies are handpicked at full maturity.

After a 7 to 8-month brining period, the chili begins its maturation process for 2 years in chestnut barrels placed 60 meters deep in the giant chasm of Cabrespine, located in the Aude region.

During this period, it slowly improves in a mineral-rich environment at a constant temperature of 14°C, with our regular visits to monitor its evolution.

Once it emerges from the chasm, its velvety texture and scarlet red color give it both delicacy and strength!
At last… this is how TABANARD is born.

INGREDIENTS
Since Tabanard does not allow itself to be overly diluted in vinegar,

our recipe consists of:
60% chili, organic apple cider vinegar, Gruissan salt, organic sugar.

*Contains sulfites.

Shake well before use. The first drops may be difficult to pour until the neck clears. Tabanard is a natural product, unpasteurized, and should be stored in a cool place at a constant temperature.

A deposit may form, which is due to a slight resumption of fermentation of the apple cider vinegar and chili. This does not affect the product’s quality.
